Coconut Rice -We made this to go with the Thai Chicken Lettuce Wraps last week. It was really good, easy, and definitely worth repeating.

*Apple Stuffed Chicken Breasts: We liked it! It's always more work when you have to pound out chicken, but it was good. The husband said next time it might be good to put in real garlic instead of the garlic powder. I agreed. Fresh is always better.
