Dinner Menu for 9/1 through 9/16

Sat. 9/1: Rotisserie chicken from Costco! French bread, fresh fruit and veggies
Sun. 9/2: Chicken noodle soup
Mon. 9/3: Sweet Potato and black bean burritos**
Tue. 9/4: Loaded Nachos, spinach salad, and smoothies
Wed. 9/4: Beef and Mango Quesadillas** and spinach salad
Thu. 9/5: Couscous Stuffed Peppers** and Mango Quinoa Salad
Fri. 9/7: Out to eat
Sat. 9/8: Chicken Enchiladas
Sun. 9/9: w/ Jensens
Mon. 9/10: Yorkshire Pudding and smoothies
Tue. 9/11: Chicken Pesto Sandwiches
Wed. 9/12: Chicken Azteca over cornbread --freeze half
Thu. 9/13: Leftover Beef Stroganoff from freezer/last menu
Fri. 9/14: Leftover Chicken Taquitos from freezer/last menu
Sat. 9/15: w/ Rohleders --sides: Rosemary Bread, fresh fruit and veggies
Sun. 9/16: w/ missionaries: Honey Lime Enchiladas

**Sweet Potato and black bean burritos -found another vegetarian meal that everyone liked. Yum! Plus, it's filling.
**Beef and Mango Quesadillas -these were pretty good. Both these and the above meal made more than I'd anticipated, so we froze them both and will make a duo meal next menu.
**Couscous Stuffed Peppers -The parents liked them, but the kids were more wary. One child liked the pepper but not the stuffing, and with the other it was the opposite. Feta is a strong flavor for small children (we even used less than it called for), but the adults sure liked it.
