I couldn't find sweet soy sauce at the store. I'll find it next time, but I'll use this for now.
Wed. 1/20: Chicken Sandwiches (Costco chicken patties)
Thu. 1/21: Taco Salad
Fri. 1/22: Tuna Pasta Salad and Mango Quinoa Salad
Sat. 1/23: Cinnamon Oat Pancakes and eggs
Sun. 1/24: Mediterranean Pork and Couscous
Mon. 1/25: Chicken and Wild Rice Supreme
Tue. 1/26: Veggie Burgers (Costco veggie patties)
Wed. 1/27: Spaghetti and Meatballs
Thu. 1/28: Crockpot Ratatouille and crusty bread
Fri. 1/29: Chicken Tortellini Bake
Sat. 1/30: Pork Chops and Mashed Potatoes
Sun. 1/31: Something easy, like leftovers.

*Quinoa and black bean tacos-- these were good. I can do quinoa only when the taste is disguised enough. These did the job. Our corn tortillas kept breaking apart, but we still got the kids to eat. Worth repeating.
*Thai Chicken Lettuce Wraps --YUM!!! I was afraid of the fish sauce, but my friend who passed the recipe was reassuring. I wish I would have doubled the recipe and will next time I make it. The kids even liked it. Not bad considering they are mostly unfamiliar with Asian flavors.
