*The muffins were good. They weren't on the sweet like cake side, which is better since it needed to be a filling breakfast. Hearty and relatively healthy muffin.
*I tried a recipe of Rolled Chicken after hearing a lady talk about it. You thaw and then thin out chicken breasts. Then you put something on, like cream cheese, spinach, and sun dried tomatoes, and salt and pepper, and roll the chicken tightly. You then roll it tightly in plastic wrap. Boil water in a pot and drop in the rolled chicken. Bring back to a boil, and I think 8-9 min. should do it. Then you cut the chicken into wheels after unwrapping it. I need to play with this recipe a little more. Next time I would cut off the ends and toss them, since that's where the cooked chicken fluff goes... Also, I would put more stuffing in the chicken or across the breast before I rolled it. Otherwise it was actually pretty good. It would be an easy one to make early in the day and then cook later in the day.
