*Tortellini Primavera --good, easy. Should do again.
*Beef and Bean Burritos --good. Husband really liked them and was reminded of Taco Time flavors. I thought they were okay and worth repeating, at least. It made quite a bit extra.
*Red Pepper Pasta: I nixed this one because I could not find a jar of roasted red peppers that didn't have a bunch of junk added to it. And I wasn't willing to shop around just for that. I guess you can roast your own peppers, but good grief, I ain't got time for that.
*Mini Meatball Sandwiches: Good enough. Family ate them just fine. Not any better really than any of the other meatballs I've made, but it came together fairly quickly and tasted good. That, I can handle.
