*Roasted Veggie Tacos made a great summer meal. I put black beans in with it to add some protein. The corn tortillas fell apart, but it was still tasty. I'd love to have the meal again.
*Mediterranean Lentil Salad -No go. The reviews said it was good, so I had high hopes. I ate enough to get full, and so did the husband, but I threw the rest away after tricking my kids into each taking a bite.
*Fruit Pizza --loved it. I didn't mark that we were having it for the first time, but it was the first. It was great --not overly sweet, and I felt good making the dough from scratch rather than using pre made sugar cookie dough.
Just popped in. Sorry about the Mediterranean Lentil Salad. We did not like it either. I threw a bunch out, too. Bummer.
You have to try the Sweet Potato & Black Bean Tacos on my menu this week. We had them last night and loved them.
I just saw this over a month later! Yeah, just thinking back on that Mediterranean salad makes me gag. I will definitely give the tacos a go. We love sweet potatoes and black beans. Thank you!
