*Corn and potato hash -this was really good and really pretty with the blue potatoes. Very rustic and colorful.
*Sauteed Radishes -not for us.
*Skinny lasagna rolls -nothing any more special than a regular lasagna, but it was a fun new way to serve it.
*Braised Belgian Endive- interesting. I think I was the only one who liked it.
*Spinach and Bean Burrito wraps- I tweaked the recipe a bit with some spices, and we really liked it. I used white rice because I didn't have time for brown.
*Cobb Salad -Good enough. Tasted like it should. I liked the dressing.
*Superfood soup -I didn't know if anyone would like this, especially with the veggie broth and V8 in it, but it was good. We put cheese on top and sprinkled some broken tortillas chips on it. It made great leftovers as well.
*Quinoa and Veggie Stir Fry -I am having a hard time liking quinoa. I want to. I like it in salad recipes with vinegar dressings maybe because it covers the taste of it enough. Husband said this would have been better with chicken broth instead of veggie broth. I am not drawn to make it again.
