*Caesar Potatoes -These were good, but I don't know what I was thinking when I paired it with the pasta salad. Both good, but not together. The caesar potatoes would be a good side to a basic meat.
*Quinoa Patties - I wish so badly I had liked them better. The kids ate them with some encouragement, husband thought they were pretty good, but I couldn't get past the texture for some reason.
*Sweet and sour chicken -Yum! Definitely some extra effort/time required in this dish, but I loved it.
*Tex Mex Enchilada Casserole - Basic enough flavors, tasted great, whole family liked it.
