Dinner Menu for 3/17 - 4/1

Sun. 3/17: St. Patrick's Day -company: 4 packet roast*, Irish Soda Bread* w/ green honey butter, spinach salad, green grapes, Jello poke cake (guests bringing mashed potatoes and a green surprise)
Mon. 3/18: Honey Lime Enchiladas (we didn't get to this and the next recipe last time)
Tue. 3/19: Spinach stuffed shells and pineapple
Wed. 3/20: Completos w/ fruit and veggie
Thu. 3/21: Lazy Sunday Casserole
Fri. 3/22: Shrapnel dip and cheese quesadillas
Sat. 3/23: Out
Sun. 3/24: Split Pea Soup*
Mon. 3/25: Sweet Potato and black bean burritos
Tue. 3/26: Meatloaf and roasted potatoes
Wed. 3/27: Chicken Tortellini Bake -add spinach
Thu. 3/28: Breakfast for dinner
Fri. 3/29: Pizza night! w/ Caesar salad
Sat. 3/30: Ritz chicken w/ fruits and veggies
Sun. 3/31: Beans and rice
Mon. 4/1: Rotisserie chicken, French bread, fruits & veggies

**Four Packet Roast was pretty good, but nothing to rave about beyond any other roast. Husband said he could taste the "fake" gravy packet in it --which apparently is of the devil. It was easy. That's always a bonus.
**Irish Soda Bread was really good and hearty. Everybody liked it. It's a fairly fast bread because it has no yeast. Called for cooking time would have overcooked ours. Ours took about 15 min. less than the recipe said both times we made it. (We made it with the Split Pea Soup as well.)
**Split Pea Soup w/ Ham and Barley. I was a little afraid of this one, but I trust the website it came from and gave it a shot. We liked it. It felt very outdoorsy or cowboy to me. Healthy and hearty. It's a great meal for a cold night. It's certainly not pretty to look at, but we'll have it again. Not often, but it's worth making again.
